Monster Eye Pasta Salad
Turn a classic cold pasta salad into a bowl of staring monsters that will delight kids of all ages. Toss cooked tri-color rotini or bow-tie pasta with cherry tomatoes, cucumber slices, and a light Italian vinaigrette. To create the monster eyes, slice fresh mozzarella pearls in half and press a small round slice of black olive onto the flat side of each cheese half. Scatter these “eyeballs” throughout the pasta salad so they appear to be peeking out from between the colorful noodles.
This lunch option is highly customizable; you can add diced ham, pepperoni, or bell peppers for extra flavor and nutrients. The bright colors of the vegetables combined with the stark black-and-white eyes make this dish highly photogenic and incredibly appetizing for school lunches.
