Jack-O’-Lantern Quesadillas
Bring the warmth of a freshly toasted quesadilla to the lunchbox with a festive pumpkin twist. Take two flour tortillas; on one tortilla, use a paring knife to carefully carve out classic Jack-O’-Lantern eyes, a nose, and a mouth. Place the uncut tortilla in a skillet, sprinkle it generously with cheddar cheese, and place the carved tortilla on top. Cook until the cheese melts and oozes through the carved facial features, creating a glowing orange pumpkin effect.
Cut the quesadilla into wedges or pack it whole in a round container. The warm, melted cheese combined with the crispy tortilla makes this a comforting, satisfying lunch that kids will look forward to all morning.
