Frankenstein Guacamole and Pita Chips
Bring the iconic green monster to life with a healthy, nutrient-dense green guacamole dip. Fill a square or rectangular lunch container with freshly mashed avocado, lime juice, and a pinch of salt, smoothing the top to create a flat canvas. Use blue corn tortilla chips arranged at the top of the container to mimic Frankenstein’s signature jagged, dark hair. Two slices of hard-boiled egg with black olive centers serve as his bolts and eyes, while a thin strip of nori seaweed or a slice of black bean creates his stitched, grumpy mouth.
To prevent the guacamole from oxidizing and turning brown before the school bell rings, press a piece of plastic wrap directly onto the surface of the dip before sealing the container, or mix in an extra squeeze of fresh lime juice. This bright green centerpiece is highly engaging and encourages kids to dip their favorite veggies and whole-grain pita triangles into a healthy fat source.
